This page is all about taking care of our family's lovely cast iron. The information found here is adapted almost verbatim (with emphasis added) from information provided by pi(ka)zen gkammer:

Cast iron pans are supposed to be non stick, so they are good for normally sticky things like eggs and fish. However, there are a few things that you should know about caring for them before using them:

  1. Although they're "non stick", you should still use oil when cooking so that they continue to be non stick in the future.
  2. Do not wash them with soap or steel wool. Use just water and a sponge.
  3. If needed, remove really stuck food bits by putting a little water in the pans and then simmering it, then scraping with a sponge or non-metallic scraper.
  4. Dry them immediately after use, then use a paper towel to rub a little bit of oil on them, and then hang them up.

Please don't leave them wet in the drying rack or dirty in the sink or something. Use them if you have the time to follow the correct procedure for washing them immediately after cooking.
